Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a small bowl, whisk together 1/4 cup honey, 2 tablespoons soy sauce, 1 tablespoon olive oil, minced garlic, grated ginger, salt, and pepper.
  • Place the salmon fillets in a shallow dish and pour the honey glaze over them. Let them marinate for 10 minutes.
  • While the salmon is marinating, toss the mixed vegetables with 2 tablespoons balsamic vinegar, 2 tablespoons olive oil, dried thyme, garlic powder, salt, and pepper. Spread them out on the prepared baking sheet.
