Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Salt and pepper to taste
- 1 pound mixed vegetables (such as bell peppers, zucchini, and red onion), cut into bite-sized pieces
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, whisk together 1/4 cup honey, 2 tablespoons soy sauce, 1 tablespoon olive oil, minced garlic, grated ginger, salt, and pepper.
- Place the salmon fillets in a shallow dish and pour the honey glaze over them. Let them marinate for 10 minutes.
- While the salmon is marinating, toss the mixed vegetables with 2 tablespoons balsamic vinegar, 2 tablespoons olive oil, dried thyme, garlic powder, salt, and pepper. Spread them out on the prepared baking sheet.
- Place the marinated salmon fillets on the baking sheet with the vegetables. Drizzle any remaining honey glaze over the salmon.
- Roast in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender, stirring the vegetables halfway through cooking.
- Remove from the oven and let the salmon rest for a few minutes before serving.
