Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon lemon pepper seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 oranges, peeled and segmented
- 2 grapefruits, peeled and segmented
- 1/4 red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup of honey, 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 tablespoon of lemon pepper seasoning, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Place the chicken breasts in a resealable plastic bag and pour the honey mixture over them. Seal the bag and massage the marinade into the chicken. Let it marinate for 10-15 minutes.
- While the chicken is marinating, prepare the citrus salad. In a large bowl, combine the orange segments, grapefruit segments, thinly sliced red onion, and fresh mint leaves.
- In a small bowl, whisk together 2 tablespoons of balsamic vinegar and 1 tablespoon of honey. Pour the dressing over the citrus salad and toss to combine. Season with salt and pepper to taste.
- Grill the marinated chicken breasts for 6-7 minutes on each side, or until they are cooked through and have nice grill marks. Baste the chicken with any remaining honey glaze while grilling.
- Once the chicken is done, remove it from the grill and let it rest for a few minutes before serving.
