- 4 bone-in pork chops
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 pound baby potatoes, halved
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 1 red onion, sliced
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together 1/4 cup honey, 2 tablespoons soy sauce, minced garlic, paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Heat 2 tablespoons of olive oil in a Dutch oven over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown.
- Brush the honey glaze over the pork chops, then transfer the Dutch oven to the preheated oven. Bake for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- While the pork chops are baking, prepare the roasted vegetables. In a large bowl, toss the halved baby potatoes, sliced carrots, chopped red bell pepper, and sliced red onion with 2 tablespoons of balsamic vinegar, dried thyme, garlic powder, salt, and pepper.
- Spread the seasoned vegetables on a baking sheet and roast in the oven for 20-25 minutes, or until tender and golden brown.
- Once the pork chops and vegetables are done, remove them from the oven. Let the pork chops rest for 5 minutes before serving.
