  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups mixed vegetables (such as carrots, bell peppers, and zucchini), chopped
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together 1/4 cup of honey, 2 tablespoons of soy sauce, minced garlic, paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.

  • Spread the seasoned vegetables on a separate baking sheet and roast in the oven for 20-25 minutes, or until they are tender and slightly caramelized.
