  • 1 block (14 oz) of firm tofu, drained and cubed
  • 1/4 cup of soy sauce
  • 3 tablespoons of honey
  • 2 cloves of garlic, minced
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of cornstarch
  • 2 tablespoons of water
  • 2 cups of cooked quinoa
  • 2 green onions, thinly sliced
  • 1 tablespoon of sesame seeds
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together 1/4 cup of soy sauce, 3 tablespoons of honey, minced garlic, and rice vinegar. Set aside.
  • In another small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Set aside.
  • Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium-high heat. Add the cubed tofu and cook until golden and crispy on all sides, about 8-10 minutes. Season with salt and pepper to taste.
  • Once the tofu is crispy, pour the honey garlic sauce over the tofu in the skillet. Stir gently to coat the tofu in the sauce.
  • Add the cornstarch slurry to the skillet and stir gently to combine. Cook for an additional 2-3 minutes, or until the sauce has thickened and coats the tofu.
  • Remove the skillet from the heat and sprinkle the green onions and sesame seeds over the tofu.
  • To serve, spoon the honey garlic tofu over a bed of cooked quinoa. Enjoy!
