Instructions

  • Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
  • Add 3 cloves of minced garlic and sauté for 30 seconds until fragrant.
  • Add 1 pound of shrimp to the skillet and season with salt and pepper. Cook for 2-3 minutes until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add 2 cups of mixed vegetables and stir-fry for 3-4 minutes until they are crisp-tender.
