Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cups brown rice
- 4 cups water
- 1 head of broccoli, cut into florets
- Salt and pepper to taste
Instructions
- In a small bowl, mix together 1/4 cup of honey, 3 cloves of minced garlic, and 2 tablespoons of soy sauce to create the honey garlic glaze.
- Season the salmon fillets with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the salmon fillets to the skillet and cook for 3-4 minutes on each side, or until golden and cooked through.
- Brush the honey garlic glaze over the cooked salmon fillets and cook for an additional 1-2 minutes, allowing the glaze to caramelize. Remove from heat and set aside.
- In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of brown rice, reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, steam the broccoli florets in a steamer basket for 5-7 minutes, or until tender-crisp.
- Serve the honey garlic glazed salmon with the cooked brown rice and steamed broccoli. Enjoy!
