Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top. Lightly grease the rack with cooking spray.
  • In a small bowl, whisk together 1/2 cup of honey, 1/4 cup of soy sauce, 4 cloves of minced garlic, 2 tablespoons of olive oil, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Place the chicken drumsticks in a large resealable plastic bag. Pour half of the honey garlic mixture over the drumsticks, seal the bag, and toss to coat the chicken evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  • Arrange the marinated drumsticks on the prepared wire rack. Bake for 20 minutes, then brush the drumsticks with the remaining honey garlic mixture. Return to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and the glaze is caramelized.
  • Remove from the oven and let the drumsticks rest for 5 minutes. Sprinkle with chopped fresh parsley, if desired, and serve hot. Enjoy!
