  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup snap peas
  • Cooked rice, for serving

Instructions

  • In a small bowl, mix 2 tablespoons of soy sauce with 1 tablespoon of cornstarch until smooth. Set aside.
  • In another bowl, combine 1/4 cup of honey, 3 cloves of minced garlic, 1 teaspoon of minced ginger, and 1/2 teaspoon of red pepper flakes. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  • Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the sliced red and green bell peppers and snap peas. Stir-fry for 2-3 minutes until the vegetables are crisp-tender.
  • Return the cooked chicken to the skillet. Pour the honey garlic sauce over the chicken and vegetables. Stir to coat everything evenly and cook for an additional 2-3 minutes until the sauce thickens slightly.
  • Serve the spicy honey garlic chicken stir-fry over cooked rice and enjoy!
