Instructions

  • Preheat the oven to 400 degrees F.
  • In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, 2 tablespoons of honey, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Place the sliced carrots on a baking sheet and drizzle the honey balsamic mixture over them. Toss to coat evenly.
  • Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring once halfway through.
