Ingredients
- 2 cups of old-fashioned oats
- 1/2 cup of chopped nuts (almonds, walnuts, or pecans)
- 1/2 cup of dried fruit (raisins, cranberries, or apricots)
- 1/4 cup of honey
- 1/4 cup of maple syrup
- 1/4 cup of creamy peanut butter
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of cinnamon
- 1/4 teaspoon of salt
Instructions
- Preheat the oven to 350 degrees F. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, combine 2 cups of old-fashioned oats, 1/2 cup of chopped nuts, and 1/2 cup of dried fruit.
- In a small saucepan, heat 1/4 cup of honey, 1/4 cup of maple syrup, and 1/4 cup of creamy peanut butter over low heat, stirring until smooth. Remove from heat and stir in 1 teaspoon of vanilla extract, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of salt.
- Pour the wet mixture over the dry ingredients and stir until well combined.
- Transfer the mixture to the prepared baking pan and press it down firmly and evenly with a spatula.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Allow the granola bars to cool completely in the pan before using the parchment paper overhang to lift them out and transfer to a cutting board.
- Cut into 12 bars and store in an airtight container at room temperature for up to a week.
