Ingredients
- 1 pound dried navy beans
- 8 slices bacon, chopped
- 1 onion, diced
- 1/2 cup ketchup
- 1/3 cup molasses
- 1/4 cup brown sugar
- 2 tablespoons Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups water
Instructions
- Rinse the navy beans and place them in a large pot. Cover with 6 cups of water and bring to a boil. Boil for 10 minutes, then remove from heat and let the beans soak for 1 hour. Drain and set aside.
- Preheat the oven to 325°F (165°C).
- In a large oven-safe pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
- Add the diced onion to the pot with the bacon grease and cook until softened, about 5 minutes.
- Stir in the ketchup, molasses, brown sugar, Dijon mustard, salt, and black pepper. Add the cooked navy beans and crispy bacon, stirring to combine.
- Cover the pot and bake in the preheated oven for 1 1/2 to 2 hours, or until the beans are tender and the sauce has thickened, stirring occasionally. If the beans start to look dry, add a little water to the pot.
- Serve the homemade baked beans with bacon hot as a side dish or enjoy as a main dish with crusty bread.
