Ingredients
- 4 large potatoes, diced
- 1/2 cup bacon bits
- 1/2 onion, diced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add 4 large diced potatoes to the skillet and cook for 10-12 minutes, stirring occasionally, until they start to brown and become tender.
- Add 1/2 cup of bacon bits and 1/2 diced onion to the skillet, and continue cooking for an additional 5-7 minutes, until the bacon is crispy and the onions are translucent.
- Season the home fries with 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, and salt and pepper to taste. Stir well to combine.
- Cook for another 2-3 minutes to allow the flavors to meld together.
- Sprinkle 2 tablespoons of chopped fresh parsley over the home fries before serving.
- Transfer the bacon home fries to a serving dish and enjoy!
