Ingredients
- 4 large russet potatoes, diced into 1/2 inch cubes
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup sour cream
- 2 tablespoons chopped fresh chives
Instructions
- Place the diced potatoes in a large pot and cover with cold water. Bring to a boil and cook for 5 minutes. Drain and pat dry with paper towels.
- In a large skillet, heat the olive oil over medium-high heat. Add the parboiled potatoes in a single layer and cook for 5 minutes without stirring to allow them to crisp up.
- Sprinkle the paprika, garlic powder, and onion powder over the potatoes. Season with salt and pepper to taste. Stir to combine and continue cooking for another 15-20 minutes, stirring occasionally, until the potatoes are golden and crispy.
- In a small bowl, mix the sour cream with half of the chopped chives. Transfer to a serving dish and sprinkle the remaining chives on top.
- Serve the crispy home fries hot with the side of sour cream and chives.
