Instructions

  • Rinse the chicken and pat dry with paper towels. Place the chicken in a roasting pan.
  • In a small bowl, mix together the olive oil, chopped herbs, salt, and black pepper. Rub the herb mixture all over the chicken, including under the skin and inside the cavity.
  • Roast the chicken in the preheated oven for 45 minutes.
  • In a small saucepan, combine the honey, soy sauce, and minced garlic. Heat over low heat, stirring constantly, until the honey is melted and the glaze is well combined.
  • After 45 minutes of roasting, brush the honey glaze all over the chicken. Return the chicken to the oven and continue roasting for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  • Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve the herb roasted chicken with any remaining honey glaze drizzled on top. Enjoy!
