Instructions

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix together the chopped spinach, crumbled feta cheese, minced garlic, and chopped herbs.
  • Rinse the chicken and pat dry with paper towels. Season the inside and outside of the chicken with salt and pepper.
  • Carefully loosen the skin of the chicken by gently sliding your fingers underneath the skin, being careful not to tear it.
  • Stuff the spinach and feta mixture under the skin of the chicken, distributing it evenly on both sides of the breast and thighs.
  • Rub the outside of the chicken with olive oil and season with additional salt and pepper.
  • Place the stuffed chicken on a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  • Remove the chicken from the oven and let it rest for 10 minutes before carving.
