Herb-Crusted Rack of Lamb

Ingredients
- 2 racks of lamb, frenched
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Season the racks of lamb with salt and pepper.
- In a small bowl, mix together the Dijon mustard, minced garlic, chopped rosemary, and chopped thyme.
- Spread the herb mixture evenly over the top of each rack of lamb.
- Press the breadcrumbs onto the herb mixture to form a crust.
- In a large skillet, heat the olive oil over medium-high heat.
- Sear the racks of lamb, crust side down, for 3-4 minutes until golden brown.
- Transfer the racks of lamb to a baking sheet, crust side up.
- Roast in the preheated oven for 15-20 minutes for medium-rare, or until the internal temperature reaches 135°F (57°C).
- Remove from the oven and let the lamb rest for 5 minutes before slicing and serving.
