Herb Crusted Baked Salmon with Lemon Butter Sauce

Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh chives, chopped
- 1/2 cup panko breadcrumbs
- 1/4 cup grated parmesan cheese
- 1/4 cup melted butter
- Salt and pepper to taste
- 1/4 cup unsalted butter
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix together 1/4 cup chopped parsley, 2 tablespoons chopped dill, 2 tablespoons chopped chives, panko breadcrumbs, parmesan cheese, melted butter, salt, and pepper.
- Place the salmon fillets on the prepared baking sheet. Press the herb mixture onto the top of each fillet to form a crust.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
- While the salmon is baking, prepare the lemon butter sauce. In a small saucepan, melt 1/4 cup unsalted butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Stir in the chicken broth, lemon juice, and lemon zest. Simmer for 2-3 minutes until the sauce slightly thickens.
- Remove the sauce from the heat and stir in 1 tablespoon of chopped parsley.
- To serve, spoon the lemon butter sauce over the baked salmon fillets. Enjoy!
