  • 1/4 cup melted butter
  • Salt and pepper to taste
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a small bowl, mix together 1/4 cup chopped parsley, 2 tablespoons chopped dill, 2 tablespoons chopped chives, panko breadcrumbs, parmesan cheese, melted butter, salt, and pepper.
  • Place the salmon fillets on the prepared baking sheet. Press the herb mixture onto the top of each fillet to form a crust.
  • Bake the salmon in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  • While the salmon is baking, prepare the lemon butter sauce. In a small saucepan, melt 1/4 cup unsalted butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Stir in the chicken broth, lemon juice, and lemon zest. Simmer for 2-3 minutes until the sauce slightly thickens.
  • Remove the sauce from the heat and stir in 1 tablespoon of chopped parsley.
  • To serve, spoon the lemon butter sauce over the baked salmon fillets. Enjoy!
