  • 2 bay leaves
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 cup red wine (optional)
  • 1 French baguette
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  • In a large bowl, combine 1/4 cup of flour, 1 tsp of salt, and 1/2 tsp of black pepper. Dredge the beef stew meat in the flour mixture, shaking off any excess.
  • In a large pot or Dutch oven, heat 3 tbsp of olive oil over medium-high heat. Add the dredged beef stew meat and cook until browned on all sides. Remove the meat and set aside.
  • In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  • Return the browned beef stew meat to the pot. Add 4 cups of beef broth, 2 cups of water, sliced carrots, diced potatoes, bay leaves, dried thyme, and dried rosemary. If using, add 1/2 cup of red wine. Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 to 2 hours, or until the meat is tender.
  • While the stew is simmering, preheat the oven to 375°F (190°C). Slice the French baguette in half lengthwise and place on a baking sheet.
  • In a small bowl, mix together 1/2 cup of softened butter, 4 cloves of minced garlic, and 2 tbsp of chopped parsley. Spread the garlic butter mixture evenly over the cut sides of the baguette. Sprinkle with 1/2 cup of grated Parmesan cheese.
  • Bake the garlic bread in the preheated oven for 10-15 minutes, or until the edges are golden brown and the cheese is melted.
  • Once the beef stew is ready, remove the bay leaves and season with salt and pepper to taste. Serve the hearty beef stew with the freshly baked garlic bread on the side. Enjoy!
