Instructions

  • In a large bowl, mix 2 cups of flour and 1/2 teaspoon of salt. Add the cold, diced butter and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Be careful not to overwork the dough. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Use a round cutter or a small bowl to cut out circles of dough, about 5-6 inches in diameter.
  • Place a spoonful of your favorite pie filling in the center of each dough circle. Brush the edges of the dough with the beaten egg, then fold the dough over the filling to create a half-moon shape. Press the edges together to seal, then crimp with a fork to create a decorative edge.
  • Place the hand pies on the prepared baking sheet, brush the tops with the beaten egg, and cut a few slits in the top to allow steam to escape during baking.
  • Bake for 20-25 minutes, or until the hand pies are golden brown and the filling is bubbly. Allow to cool for a few minutes before serving. Enjoy your delicious hand pies!
