Homemade Gyros

Ingredients
- 1 lb of lamb, thinly sliced
- 4 pita bread
- 1 cup of plain Greek yogurt
- 1 cucumber, grated and drained
- 2 cloves of garlic, minced
- 1 tablespoon of lemon juice
- 1 teaspoon of dried oregano
- 1 teaspoon of paprika
- 1/2 teaspoon of cumin
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of olive oil
- 1 tomato, thinly sliced
- 1/2 red onion, thinly sliced
- 1/4 cup of fresh parsley, chopped
Instructions
- In a bowl, combine the plain Greek yogurt, grated and drained cucumber, minced garlic, lemon juice, and a pinch of salt. Mix well to make the tzatziki sauce. Refrigerate until ready to use.
- In a separate bowl, combine the dried oregano, paprika, cumin, salt, and black pepper. Add the thinly sliced lamb and toss to coat the meat with the seasoning.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned lamb slices and cook for 3-4 minutes, or until the meat is browned and cooked through. Remove from heat and set aside.
- Warm the pita bread in a dry skillet or in the oven for a few minutes.
- To assemble the gyros, spread a generous amount of tzatziki sauce on each pita bread. Top with the cooked lamb, sliced tomato, red onion, and chopped parsley.
- Fold the pita bread over the filling to form a gyro. Serve immediately and enjoy!
