Gyro Plate with Greek Salad

Ingredients
- 1 lb of lamb or chicken, thinly sliced
- 4 pita bread
- 1 cup of plain Greek yogurt
- 1 cucumber, diced
- 1 tomato, diced
- 1/2 red onion, thinly sliced
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of Kalamata olives, pitted
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 4 cups of mixed salad greens
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Season the sliced lamb or chicken with salt, pepper, and dried oregano.
- Grill the meat for 3-4 minutes on each side, or until cooked through. Remove from heat and let it rest for a few minutes.
- While the meat is resting, warm the pita bread on the grill for about 1 minute on each side.
- In a small bowl, mix the diced cucumber, tomato, red onion, feta cheese, and Kalamata olives. Set aside.
- In another bowl, whisk together the Greek yogurt, olive oil, red wine vinegar, and a pinch of salt and pepper to make the dressing for the Greek salad.
- To assemble the gyro plates, place a warmed pita bread on each plate. Top with the grilled meat and a dollop of Greek yogurt. Serve with the Greek salad on the side.
- Toss the mixed salad greens with the prepared dressing just before serving.
