  • 3 ripe avocados
  • 1 head of garlic
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut the top off the head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 30 minutes. Let cool.
  • Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
  • Squeeze the roasted garlic cloves out of their skins and add to the bowl with the avocados.
  • Mash the avocados and roasted garlic together with a fork or potato masher until smooth.
  • Stir in the red onion, cilantro, jalapeno, lime juice, salt, cumin, and black pepper until well combined.
  • Taste and adjust seasoning if necessary.
  • Serve immediately with tortilla chips or as a topping for tacos, burritos, or nachos.
