  • 4 wild boar steaks (6 oz each)
  • 2 tbsp olive oil
  • Salt and pepper to taste

  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  • Preheat the grill to medium-high heat.
  • Drizzle the wild boar steaks with 1 tbsp of olive oil and season with salt and pepper. Set aside to marinate while preparing the mashed potatoes.
  • Preheat the oven to 400°F. Cut the top off the head of garlic to expose the cloves, drizzle with 1 tbsp of olive oil, wrap in foil, and roast for 30 minutes until soft and caramelized. Squeeze the roasted garlic cloves out of their skins and set aside.
  • Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
  • Mash the roasted garlic cloves and add them to the pot with the potatoes. Add the heavy cream, butter, and Parmesan cheese. Mash and mix until smooth and creamy. Season with salt and pepper to taste. Keep warm.
  • While the potatoes are cooking, grill the wild boar steaks for 4-5 minutes per side for medium-rare, or to your desired level of doneness. Remove from the grill and let rest for a few minutes before serving.
  • To serve, divide the roasted garlic mashed potatoes among 4 plates and top each with a grilled wild boar steak. Sprinkle with chopped parsley and serve hot.
