Instructions

  • Preheat grill to medium-high heat.
  • In a large bowl, toss the zucchini, yellow squash, red bell pepper, and red onion with 2 tablespoons of olive oil. Season with salt and pepper.
  • Grill the vegetables for 3-4 minutes per side, or until they have grill marks and are tender. Remove from the grill and set aside.
  • Warm the whole wheat tortillas on the grill for 1-2 minutes per side.
  • In a small bowl, mix together the hummus, crumbled feta cheese, chopped fresh parsley, Greek yogurt, lemon juice, and dried oregano.
  • To assemble the wraps, spread a quarter of the hummus mixture onto each tortilla. Top with grilled vegetables.
  • Fold in the sides of the tortilla and then roll it up tightly, tucking in the ends as you go.
  • Slice the wraps in half and serve immediately. Enjoy!
