Grilled Vegetable Wrap

Ingredients
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 large whole wheat tortillas
- 1/2 cup hummus
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
Instructions
- Preheat grill to medium-high heat.
- In a large bowl, toss the zucchini, yellow squash, red bell pepper, and red onion with 2 tablespoons of olive oil. Season with salt and pepper.
- Grill the vegetables for 3-4 minutes per side, or until they have grill marks and are tender. Remove from the grill and set aside.
- Warm the whole wheat tortillas on the grill for 1-2 minutes per side.
- In a small bowl, mix together the hummus, crumbled feta cheese, chopped fresh parsley, Greek yogurt, lemon juice, and dried oregano.
- To assemble the wraps, spread a quarter of the hummus mixture onto each tortilla. Top with grilled vegetables.
- Fold in the sides of the tortilla and then roll it up tightly, tucking in the ends as you go.
- Slice the wraps in half and serve immediately. Enjoy!
