Ingredients
- 2 zucchinis, cut into 1-inch rounds
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 8 cherry tomatoes
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 skewers
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 2 cloves minced garlic, 1 teaspoon dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Thread the zucchini rounds, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes onto the skewers, alternating the vegetables as desired.
- Brush the vegetable skewers with the prepared marinade, coating all sides.
- Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them cool for a few minutes before serving.
