Instructions

  • Cook the macaroni pasta according to package instructions. Drain and set aside to cool.
  • Preheat grill to medium-high heat.
  • In a large bowl, toss the sliced red and yellow bell peppers, zucchini, and red onion with olive oil, balsamic vinegar, dried oregano, salt, and black pepper.
  • Grill the vegetables for 3-4 minutes per side, or until they have grill marks and are slightly softened. Remove from the grill and let cool.
  • In a large serving bowl, combine the cooked macaroni pasta and grilled vegetables. Toss to mix well.
