Ingredients
- 8 oz macaroni pasta
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
Instructions
- Cook the macaroni pasta according to package instructions. Drain and set aside to cool.
- Preheat grill to medium-high heat.
- In a large bowl, toss the sliced red and yellow bell peppers, zucchini, and red onion with olive oil, balsamic vinegar, dried oregano, salt, and black pepper.
- Grill the vegetables for 3-4 minutes per side, or until they have grill marks and are slightly softened. Remove from the grill and let cool.
- In a large serving bowl, combine the cooked macaroni pasta and grilled vegetables. Toss to mix well.
- Add the crumbled feta cheese and chopped parsley to the bowl and gently toss to combine.
