Grilled Tofu with Quinoa and Sautéed Spinach

Ingredients
- 1 block of extra firm tofu, pressed and sliced into 1/2 inch thick pieces
- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 tablespoon of olive oil
- 3 cloves of garlic, minced
- 1 pound of fresh spinach, washed and dried
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- Salt and pepper to taste
Instructions
- Preheat a grill or grill pan over medium-high heat.
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until all the liquid is absorbed. Fluff with a fork and set aside.
- Brush the tofu slices with olive oil and season with salt and pepper. Grill for 3-4 minutes on each side, or until grill marks appear. Remove from heat and set aside.
- In a large skillet, heat the remaining olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.
- Add the spinach to the skillet and cook, stirring occasionally, until wilted. Season with soy sauce, sesame oil, salt, and pepper. Remove from heat.
- To serve, divide the quinoa among 4 plates, top with grilled tofu slices, and sautéed spinach. Enjoy!
