Ingredients
- 2 large sweet potatoes, peeled and sliced into 1/2 inch rounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat grill to medium-high heat.
- In a large bowl, toss the sweet potato rounds with 1 tablespoon of olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
- Place the sweet potato rounds on the grill and cook for 4-5 minutes on each side, or until grill marks appear and the sweet potatoes are tender. Remove from the grill and let cool for 5 minutes.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, apple cider vinegar, and honey to make the dressing.
- In a large serving bowl, combine the grilled sweet potatoes, red onion, and parsley. Drizzle the dressing over the salad and gently toss to coat.
- Sprinkle the crumbled feta cheese on top and serve immediately. Enjoy!
