Instructions

  • Preheat grill to medium-high heat.
  • In a large bowl, toss the sweet potato rounds with 1 tablespoon of olive oil, salt, pepper, paprika, and garlic powder until evenly coated.
  • Place the sweet potato rounds on the grill and cook for 4-5 minutes on each side, or until grill marks appear and the sweet potatoes are tender. Remove from the grill and let cool for 5 minutes.
  • In a small bowl, whisk together the remaining 1 tablespoon of olive oil, apple cider vinegar, and honey to make the dressing.
  • In a large serving bowl, combine the grilled sweet potatoes, red onion, and parsley. Drizzle the dressing over the salad and gently toss to coat.
