Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1/4 cup of unsalted butter
- 2 cloves of garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 2 tablespoons of chopped fresh parsley
- 1 tablespoon of chopped fresh chives
Instructions
- Preheat grill to medium-high heat.
- In a bowl, toss the shrimp with 2 tablespoons of olive oil, salt, and pepper.
- Thread the shrimp onto skewers, if using wooden skewers, make sure to soak them in water for 30 minutes before grilling.
- Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
- In a small saucepan, melt 1/4 cup of unsalted butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
- Stir in the lemon zest and lemon juice, then remove from heat.

- Sprinkle the chopped fresh parsley and chives over the shrimp.
