  • 1/4 cup of unsalted butter
  • 2 cloves of garlic, minced
  • 1 lemon, juiced and zested
  • 1 tablespoon of chopped fresh parsley

  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water and drain well. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • Preheat grill to medium-high heat.
  • In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the lemon juice and zest, and chopped parsley. Season with salt and pepper to taste. Keep warm over low heat.
  • Thread the shrimp onto skewers and season with salt and pepper. Grill the shrimp for 2-3 minutes per side, or until they are pink and opaque.
  • To serve, spoon a generous portion of quinoa onto each plate. Place the grilled shrimp skewers on top of the quinoa and drizzle with the lemon butter sauce. Enjoy!
