Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 8 small flour tortillas
- 2 cups of shredded cabbage
- 1 avocado, sliced
- 1/4 cup of chopped fresh cilantro
- 1 lime, cut into wedges
- For the mango salsa:
- 1 ripe mango, peeled and diced
- 1/2 red bell pepper, diced
- 1/4 cup of red onion, finely chopped
- 1 jalapeno pepper, seeded and finely chopped
- 2 tablespoons of fresh lime juice
- 2 tablespoons of chopped fresh cilantro
- Salt to taste
Instructions
- Preheat grill to medium-high heat.
- In a medium bowl, toss the shrimp with 1 tablespoon of olive oil, chili powder, cumin, garlic powder, salt, and black pepper until well coated.
- Thread the shrimp onto skewers and grill for 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
- In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeno, lime juice, and cilantro to make the mango salsa. Season with salt to taste.
- Heat the tortillas on the grill for about 30 seconds per side, until they are warm and slightly charred.
- To assemble the tacos, place a small handful of shredded cabbage on each tortilla, top with grilled shrimp, mango salsa, avocado slices, and a sprinkle of fresh cilantro. Serve with lime wedges on the side.
