  • 2 limes, juiced
  • 2 tablespoons olive oil

Instructions

  • Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • Preheat the grill to medium-high heat. Season the salmon fillets with salt and pepper.
  • In a bowl, combine the diced mango, red onion, red bell pepper, cilantro, jalapeno, lime juice, and olive oil. Season with salt and pepper. Mix well to make the mango salsa.
  • Grill the salmon fillets for 4-5 minutes per side, or until the fish flakes easily with a fork.
  • To serve, divide the quinoa among 4 plates. Top each with a grilled salmon fillet and a generous spoonful of mango salsa.
