Ingredients
- 4 salmon fillets (6 oz each)
- 1 lb asparagus, trimmed
- 4 tbsp unsalted butter, softened
- 2 tbsp fresh dill, chopped
- 1 lemon, juiced and zested
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together the softened butter, chopped dill, lemon juice, lemon zest, and minced garlic. Season with salt and pepper to taste. Set aside.
- Toss the trimmed asparagus with 1 tbsp of olive oil, salt, and pepper. Place on a baking sheet and roast in the preheated oven at 400°F for 10-12 minutes, or until tender but still crisp.
- Brush the salmon fillets with the remaining 1 tbsp of olive oil and season with salt and pepper.
- Place the salmon fillets on the preheated grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
- During the last minute of grilling, top each salmon fillet with a generous dollop of the lemon dill butter to melt over the top.
- Serve the grilled salmon with the roasted asparagus on the side. Enjoy!
