Ingredients
- 4 salmon fillets (6 oz each)
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons lime juice
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the grill to medium-high heat.
- In a small saucepan, combine 1/2 cup balsamic vinegar and 1/4 cup honey. Bring to a boil, then reduce heat and simmer for 5-7 minutes, or until the glaze thickens. Set aside.
- In a medium bowl, combine 2 diced mangoes, 1/2 finely chopped red onion, 1 diced red bell pepper, 1/4 cup chopped cilantro, 1 minced jalapeno pepper, and 2 tablespoons lime juice. Season with salt and pepper to taste. Mix well and refrigerate until ready to use.
- Brush the salmon fillets with 2 tablespoons of olive oil and season with salt and pepper.
- Place the salmon fillets on the preheated grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
- During the last 2 minutes of grilling, brush the salmon fillets with the balsamic glaze.
- Remove the salmon from the grill and transfer to a serving platter. Top each fillet with a generous spoonful of fresh mango salsa.
