Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup balsamic vinaigrette dressing
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, minced garlic, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Brush the salmon fillets with the olive oil mixture and place them on the grill. Cook for 4-5 minutes on each side, or until the salmon is cooked through and has grill marks. Remove from the grill and let it rest for a few minutes.
- In a large bowl, toss together the mixed salad greens, cherry tomatoes, and red onion.
- Divide the salad mixture onto 4 plates. Place a grilled salmon fillet on top of each salad.
- Drizzle each salad with balsamic vinaigrette dressing.
- Serve immediately and enjoy!
