Instructions

  • Preheat grill to medium-high heat.
  • In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, minced garlic, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  • Brush the salmon fillets with the olive oil mixture and place them on the grill. Cook for 4-5 minutes on each side, or until the salmon is cooked through and has grill marks. Remove from the grill and let it rest for a few minutes.
  • In a large bowl, toss together the mixed salad greens, cherry tomatoes, and red onion.
  • Divide the salad mixture onto 4 plates. Place a grilled salmon fillet on top of each salad.
  • Drizzle each salad with balsamic vinaigrette dressing.
  • Serve immediately and enjoy!
