Ingredients
- 4 Mahi Mahi fillets (6 oz each)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 1/4 cup olive oil, minced garlic, paprika, cumin, salt, and pepper. Brush the mixture onto both sides of the Mahi Mahi fillets.
- Grill the Mahi Mahi fillets for 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Remove from the grill and set aside.
