Ingredients
- 4 Mahi Mahi fillets (6 oz each)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 1 tablespoon honey
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat grill to medium-high heat.
- Brush Mahi Mahi fillets with 1 tablespoon of olive oil and season with salt and pepper.
- Grill the fillets for 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
- In a medium bowl, combine diced mangoes, red onion, red bell pepper, jalapeno pepper, and cilantro.
- In a small bowl, whisk together lime juice, honey, and cayenne pepper. Pour over the mango mixture and toss to coat evenly.
- Serve the grilled Mahi Mahi topped with mango salsa.
