Ingredients
- 4 Mahi Mahi fillets (6 oz each)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup couscous
- 1 1/4 cups chicken or vegetable broth
- 1/4 cup chopped fresh parsley
- 1 lemon, cut into wedges
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix together 1/4 cup olive oil, minced garlic, paprika, cumin, salt, and black pepper.
- Brush the Mahi Mahi fillets with the olive oil mixture and let them marinate for 10 minutes.
- While the fish is marinating, prepare the couscous. In a medium saucepan, bring the broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork. Stir in the chopped parsley.
- Grill the Mahi Mahi fillets for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
