Ingredients
- 4 halibut fillets (6 ounces each)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced

- 1 cup couscous
- 1 1/4 cups chicken or vegetable broth
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup toasted pine nuts
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, 2 cloves minced garlic, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Brush the halibut fillets with the olive oil mixture and let them marinate for 10 minutes.
- While the fish is marinating, prepare the couscous. In a medium saucepan, bring 1 1/4 cups of chicken or vegetable broth to a boil. Stir in 1 cup of couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff with a fork.
- Grill the halibut fillets for 3-4 minutes per side, or until they are opaque and flake easily with a fork.
- To serve, divide the couscous among 4 plates, top each with a grilled halibut fillet, and sprinkle with chopped fresh parsley, mint, and toasted pine nuts.
