Ingredients
- 4 halibut fillets (6 ounces each)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno pepper, seeded and minced
- 3 tablespoons lime juice
- 1 tablespoon honey
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat grill to medium-high heat.
- Brush halibut fillets with 1 tablespoon of olive oil and season with salt and pepper.
- Grill halibut for 4-5 minutes on each side, or until fish flakes easily with a fork. Remove from grill and keep warm.
- In a medium bowl, combine diced mangoes, red onion, red bell pepper, cilantro, jalapeno pepper, lime juice, honey, and cayenne pepper. Mix well to combine.
- Serve grilled halibut topped with mango salsa. Enjoy!
