Instructions

  • Preheat grill to medium-high heat.
  • Brush halibut fillets with 1 tablespoon of olive oil and season with salt and pepper.
  • Grill halibut for 4-5 minutes on each side, or until fish flakes easily with a fork. Remove from grill and keep warm.
  • In a medium bowl, combine diced mangoes, red onion, red bell pepper, cilantro, jalapeno pepper, lime juice, honey, and cayenne pepper. Mix well to combine.
