Ingredients
- 4 halibut fillets (6 ounces each)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest

- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups mixed vegetables (such as bell peppers, zucchini, and red onion), chopped
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 1 tablespoon of olive oil, minced garlic, lemon zest, lemon juice, oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Brush the halibut fillets with the olive oil mixture and let them marinate for 10 minutes.
- While the halibut is marinating, preheat the oven to 425°F (220°C).
- In a large bowl, toss the mixed vegetables with the remaining 1 tablespoon of olive oil, balsamic vinegar, dried thyme, paprika, garlic powder, salt, and pepper.
- Spread the seasoned vegetables on a baking sheet in a single layer and roast in the preheated oven for 15-20 minutes, or until they are tender and slightly caramelized, stirring once halfway through.
- While the vegetables are roasting, grill the marinated halibut fillets for 3-4 minutes per side, or until they are opaque and flake easily with a fork.
