Instructions

  • Preheat the grill to medium-high heat.
  • In a small bowl, mix together 1 tablespoon of olive oil, minced garlic, lemon zest, lemon juice, oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Brush the halibut fillets with the olive oil mixture and let them marinate for 10 minutes.
  • While the halibut is marinating, preheat the oven to 425°F (220°C).
  • In a large bowl, toss the mixed vegetables with the remaining 1 tablespoon of olive oil, balsamic vinegar, dried thyme, paprika, garlic powder, salt, and pepper.
  • Spread the seasoned vegetables on a baking sheet in a single layer and roast in the preheated oven for 15-20 minutes, or until they are tender and slightly caramelized, stirring once halfway through.
  • While the vegetables are roasting, grill the marinated halibut fillets for 3-4 minutes per side, or until they are opaque and flake easily with a fork.
