Ingredients
- 1 lb of white fish fillets (such as tilapia or cod)
- 2 tablespoons of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 8 small corn tortillas
- 1 cup of shredded cabbage
- 1/4 cup of chopped fresh cilantro
- 1 lime, cut into wedges
- For the mango salsa:
- 1 ripe mango, diced
- 1/4 cup of red onion, finely chopped
- 1/4 cup of red bell pepper, diced
- 1/4 cup of fresh cilantro, chopped
- 1 jalapeno pepper, seeded and finely chopped
- 2 tablespoons of lime juice
- Salt to taste
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of cumin, 1 teaspoon of chili powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Brush the fish fillets with the spice mixture and place them on the grill. Cook for 3-4 minutes on each side, or until the fish is opaque and easily flakes with a fork.
- While the fish is grilling, prepare the mango salsa by combining 1 diced ripe mango, 1/4 cup of finely chopped red onion, 1/4 cup of diced red bell pepper, 1/4 cup of chopped fresh cilantro, 1 finely chopped jalapeno pepper, 2 tablespoons of lime juice, and salt to taste in a bowl. Mix well and set aside.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- To assemble the tacos, place a portion of grilled fish on each tortilla, top with shredded cabbage, mango salsa, and chopped cilantro. Serve with lime wedges on the side.
