Instructions

  • Preheat a grill or grill pan over medium-high heat.
  • Brush both sides of the eggplant slices with 1 tablespoon of olive oil and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  • Grill the eggplant slices for 3-4 minutes on each side, until tender and grill marks appear. Remove from the grill and set aside.
  • Toast the slices of whole grain bread until golden brown.
  • Spread 2 tablespoons of hummus on each slice of bread.
  • Layer the grilled eggplant, mixed salad greens, red onion, cucumber, and tomato on one slice of bread. Top with the other slice of bread to form a sandwich.
  • Slice the sandwich in half and serve immediately. Enjoy!
