Grilled Eggplant Sandwich

Ingredients
- 1 medium eggplant, sliced into 1/2 inch rounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 slices of whole grain bread
- 1/2 cup of hummus
- 1/2 cup of mixed salad greens
- 1/4 cup of sliced red onion
- 1/4 cup of sliced cucumber
- 1/4 cup of sliced tomato
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Brush both sides of the eggplant slices with 1 tablespoon of olive oil and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Grill the eggplant slices for 3-4 minutes on each side, until tender and grill marks appear. Remove from the grill and set aside.
- Toast the slices of whole grain bread until golden brown.
- Spread 2 tablespoons of hummus on each slice of bread.
- Layer the grilled eggplant, mixed salad greens, red onion, cucumber, and tomato on one slice of bread. Top with the other slice of bread to form a sandwich.
- Slice the sandwich in half and serve immediately. Enjoy!
