  • 2 large eggplants, sliced into 1/2 inch rounds
  • 2 cups of marinara sauce
  • 1 cup of grated mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/2 cup of breadcrumbs
  • 1/4 cup of chopped fresh basil
  • 2 tablespoons of olive oil

Instructions

  • Preheat the grill to medium-high heat.
  • Brush both sides of the eggplant slices with 2 tablespoons of olive oil and season with salt and pepper.
  • Grill the eggplant slices for 3-4 minutes on each side, until they have grill marks and are tender. Remove from the grill and set aside.
  • Preheat the oven to 375°F (190°C).
  • In a 9x13 inch baking dish, spread 1/2 cup of marinara sauce on the bottom of the dish.
  • Arrange half of the grilled eggplant slices in a single layer on top of the marinara sauce.
  • Sprinkle half of the mozzarella and Parmesan cheese over the eggplant slices.
  • Repeat the layers with the remaining marinara sauce, grilled eggplant slices, and cheese.
  • In a small bowl, mix together 1/2 cup of breadcrumbs and 1/4 cup of chopped fresh basil. Sprinkle this mixture over the top of the cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
