Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Salt and pepper to taste
- 2 heads of romaine lettuce, chopped
- 2 apples, cored and chopped
- 1 cup red seedless grapes, halved
- 1/2 cup chopped walnuts
- 1 avocado, diced
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
Instructions
- Preheat grill to medium-high heat.
- Brush chicken breasts with 2 tablespoons of olive oil and season with salt and pepper.
- Grill chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest for 5 minutes before slicing into strips.
- In a large bowl, combine chopped romaine lettuce, chopped apples, halved grapes, chopped walnuts, and diced avocado.
- In a small bowl, whisk together 1/4 cup of olive oil, mayonnaise, lemon juice, honey, and Dijon mustard to make the dressing.
- Pour the dressing over the salad and toss to coat evenly.
- Divide the salad onto 4 plates and top each with the grilled chicken strips.
