Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 6 cups mixed salad greens
- 1 large apple, cored and chopped
- 1/2 cup red seedless grapes, halved
- 1/2 cup chopped walnuts
- 1/4 cup crumbled blue cheese
- 1/4 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Drizzle with 2 tablespoons of olive oil and rub to coat evenly.
- Grill the chicken for 6-7 minutes per side, or until cooked through. Remove from the grill and let it rest for 5 minutes. Slice the chicken into thin strips.
- In a large bowl, combine the mixed salad greens, chopped apple, halved grapes, chopped walnuts, and crumbled blue cheese.
- In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, Dijon mustard, honey, minced garlic, salt, and pepper to taste to make the balsamic vinaigrette dressing.
- Drizzle the balsamic vinaigrette dressing over the salad and toss to coat evenly.
- Divide the salad onto 4 plates and top each with the grilled chicken slices.
- Serve immediately and enjoy!
