Grilled Chicken Salad

Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, mix 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Brush the mixture over the chicken breasts.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let it rest for 5 minutes before slicing.
- In a large bowl, toss the mixed salad greens, cherry tomatoes, red onion, sliced almonds, and crumbled feta cheese.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and balsamic vinaigrette. Drizzle over the salad and toss to combine.
- Divide the salad onto 4 plates and top each with sliced grilled chicken.
- Serve immediately and enjoy!
