Instructions

  • Preheat grill to medium-high heat.
  • In a small bowl, mix 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Brush the mixture over the chicken breasts.
  • Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from grill and let it rest for 5 minutes before slicing.
  • In a large bowl, toss the mixed salad greens, cherry tomatoes, red onion, sliced almonds, and crumbled feta cheese.
  • In a small bowl, whisk together the remaining 1 tablespoon of olive oil, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and balsamic vinaigrette. Drizzle over the salad and toss to combine.
  • Divide the salad onto 4 plates and top each with sliced grilled chicken.
  • Serve immediately and enjoy!
