Instructions

  • In a large bowl, toss the sliced chicken with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper until well coated.
  • Heat a grill pan or skillet over medium-high heat. Add the seasoned chicken and cook for 5-6 minutes, or until cooked through and slightly charred. Remove from heat and set aside.
  • Place a large skillet over medium heat. Place one tortilla in the skillet and sprinkle with 1/2 cup of shredded cheese. Top with a quarter of the cooked chicken, tomatoes, bell peppers, and red onion. Sprinkle with another 1/2 cup of shredded cheese and top with another tortilla.
  • Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side. Remove from the skillet and repeat with the remaining tortillas and ingredients.
  • Once all the quesadillas are cooked, carefully slice them into wedges.
  • To assemble the bowls, divide the quesadilla wedges among 4 bowls. Top with sliced avocado, chopped cilantro, a dollop of sour cream, and a spoonful of salsa.
  • Serve immediately and enjoy!
