Ingredients
- 8 oz of pasta
- 2 boneless, skinless chicken breasts
- 2 cups of fresh basil leaves
- 1/2 cup of grated Parmesan cheese
- 1/3 cup of pine nuts
- 3 cloves of garlic
- 1/2 cup of extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let them rest for a few minutes. Slice the chicken into strips.
- In a food processor, combine 2 cups of basil leaves, 1/2 cup of Parmesan cheese, 1/3 cup of pine nuts, 3 cloves of garlic, and 1/2 cup of olive oil. Blend until smooth. Season with salt and pepper to taste.
- In a large bowl, toss the cooked pasta with the pesto sauce until well coated. Add the grilled chicken strips and toss to combine.
- Serve the grilled chicken pesto pasta in individual plates. Optionally, garnish with additional Parmesan cheese and fresh basil leaves. Enjoy!
